SLIME...

Yesterday was Tim's birthday; last night the kids, Tim and I went out to dinner. We enjoyed being together in addition to having a fun time eating and visiting. We left the restaurant, went to our cars...and found a window in Tim's car had been broken by some lower than pond scum people who had stolen Tim's computer bag that included his ipod, camera, computer, etc., and his day planner. I wish bad karma on the slime buckets who did this to my husband on his birthday. I know, I know, he shouldn't have left his day planner in plain sight...then they wouldn't have broken in and found the computer bag. We've changed passwords on accounts, called other places etc.. But the best news is that the computer store where Tim had taken his computer in to be fixed on Thursday had not deleted their copy of the information that was on his old computer!!!! So when he buys a new computer, they can load everything he had on the stolen one onto the new one!!! He owns his own business so all the files are his livelihood.

This situation, along with Aaron and Tasha's apartment being burglarized, has caused me to ponder on WHAT IS THIS WORLD COMING TO?!?!?!? OR WHAT HAS THIS WORLD COME TO??!?!?

Talkin' to Grandma!


Today Ang called and let Jack talk to me; this picture was taken while we were talking. He told me what the cow says and what the monkey says too! Is this just the cutest...makes me feel so happy that he enjoyed talking to me! Can wait to hug and kiss this little guy when he's here for Christmas. Those of you who check Angela's blog have already seen this picture, but I couldn't help posting it on mine since he was talking to me!

For many, many years we have had a small turkey-shaped basket filled with slips of paper and a pen that sits on our kitchen counter during November. The little sign attached to the basket says:

It's past time...

...to post again. I'm feeling pretty good, still tire easy, have to wear pants that go below my incision, but I really can't complain, I've been blessed in so many ways that I would be ungrateful to my loving Heavenly Father if I complained.

Today Angela and Jack--from Phoenix and I iChatted while Jack ate lunch. He said "Grandma" a couple of times, we played peek-a-boo and "If you're happy and you know it". He put his hands over his eyes and turned to the side all sad when Ang took me, via the computer, away to sign off. I was touched that he remembered me, said Grandma and was sad when we were finished talking. Gotta love that kid!

Requested cream cheese frosting recipe

Just a note: the pumpkin spice bars are more cakey than heavy, dense bars.

Cream Cheese Frosting
1-8 oz. cream cheese
1/4 c. butter
1 t. vanilla
3 c. powdered sugar
milk, if needed, for spreading consistency

Blend cream cheese and butter. Slowly add powdered sugar and beat until smooth; add vanilla. Slowly add milk, if necessary, for the right consistency. Frost cooled bars and sprinkle with finely chopped nuts, if desired. I haven't made this for awhile so I can't remember if one recipe frosts the sheet cake.

Autumn favorite

I bought a cookbook a few years ago with the following pumpkin spice bar recipe in it which has become a family favorite. The cookbook also has a yummy raspberry brownie recipe...maybe I'll post that another time.

1 1/2 c. flour
1 c. packed brown sugar
1/2 c. granulated sugar
2 t. baking powder
1/4 t. baking soda
1/2 t. ginger
1 t. cinnamon
1/8 t. cloves
1/4 t. salt
1 c. pumpkin
1/2 c. oil
chopped nuts

In a large mixing bowl stir together the flour, brown sugar, granulated sugar, baking powder, baking soda, salt and spices. Stir the pumpkin, oil, and nuts into flour mixture.

Spread into an ungreased 16x12 sheet pan and bake for 15-20 minutes, or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a rack. Baking in a sheet pan serves many--30-40 maybe, but it is thin. I've also baked this in a 13x9 pan, cooked it longer and this yields thicker pieces.

I usually frost these moist bars with cream cheese frosting and sprinkle nuts on the top; however, they are delicious without any frosting. Just sprinkle chopped nuts on the top before you bake them for a nice looking top. If you want the frosting recipe, contact me and I'll be happy to send it to you and/or post it.

Home...at last!

I came home from the hospital late yesterday afternoon. My recovery is going well and the nurses and doctors are blown away...how could an overweight, 56 year old be doing so well? Well, I KNOW and I told a nurse yesterday...many prayers have gone into my recovery. I'm extremely humbled and feel every one of those prayers. THANK YOU!

Now I'm not up to eating much, climbing the stairs, lifting anything, or running a marathon(not that I did that before) but I'm slowly shuffling around the house...yes, even at 4:30 am when I woke up this morning... it's now 1 1/2 hrs later and I'm exhausted (all I've been doing is having a snack and reading the news I've been behind on for the last week) and I'm going back to bed.

My sincere thanks to my family for all their loving care and to other family and friends for their prayers, flowers, e-mail and phone calls. Special thanks to the kids in our Sunday School Class for their WONDERFUL cards and treats...

We're still awaiting the pathology results...keep praying please...the Dr. told me that because of what he saw when he performed surgery he sees chemo in my future...

Happy Birthday Aaron!

27 years ago a darling, orange haired baby boy was born to Tim and Peggy. He is our fourth child and completed our earthly family; he is also an important member of our eternal family. Aaron I love you and am proud to be your Mom. You are a very nice man and your family loves you very much. Dinner and birthday cake were great! This wonderful collage was created by his talented wife, Tasha.

It sure isn't fun coming back from a wonderful Hawaiian vacation. We had a great time with all of our kids and grandson, Jack, my sister, Mary--her husband, Tracy, three of Tim's sisters, their husbands and Tim's 85 year old mother--in addition to all of Tim's clients--52 of us. Prayers needed please.


My life, as I knew it, has changed...for now. It's been a very difficult week but thanks to my wonderful supportive family, friends and co-workers, I feel incredibly loved. Last week I was diagnosed with colon cancer. I am blessed that it was caught early and I am stage 1. I am not looking forward to the surgery or the recovery. (Surgery will be Sept. 25th---after our Hawaiian cruise. It's a slow growing cancer thank heavens and the Dr. said I can go--the entire family is going---even Jack and my sister and her husband and some of Tim's family.) Dr. Peche will take out quite a large section of my colon and my recovery will keep me out of work for about 6 weeks. If they can get all the cancer and it hasn't metastasized (spread to places other than my colon) and the post surgery lab work concurs that it is stage 1, I will not have to have to have chemo or radiation. Angela and Jack are coming up to babysit me after the surgery... I am SO appreciative of EVERYONE who will take care of me at home and those at work who will step in and cover for me and also those who are donating their vacation hours to my sick hours. Do I ever feel helpless!!! To family and friends who are just hearing this bad news by reading my blog, I apologize that I haven't called you---I just haven't had to time to call all those I wanted to. I feel so vulnerable for the first time, yet I also feel the Lord's hands in my life and am surrounded by His love; I trust Him. Thanks in advance for your thoughts and prayers in my behalf. We've had a lot going on with my health and out of town company so I really apologize for not getting this posted before your birthday Andy. You're incredibly loved and I'm so proud of you and your accomplishments... among them is your engagement to a wonderful girl, Jessi. This picture was taken when we lived in Bay Village, Ohio during one of your birthday parties with your friends and Angela. Tender Story

Tim and I went for an evening walk tonight and saw Paul and Jenny, friends from our last ward. Tim had seen an "It's a Boy" sign on their front window tonight and told me--I didn't remember Jenny being pregnant...but we don't see them often so....to make a long story short, their fourth child, a little boy named Matthew, was just adopted from China. It is HIGHLY unusual to be able to adopt a boy, but they have him and according the the Chinese and American governments...he's officially theirs! We're so excited for them! Hearing them tell their story of being back in the hotel room and trying to put Matthew to sleep and he refused to be held and would crawl away and fall asleep in a corner reminded me of when Amy and Angela e-mailed from Romania (they volunteered in orphanages) and told how the children didn't like to be touched. Paul and Jenny worked with him because they know babies need to be held and he finally will let them hold him and will fall asleep in their arms. Hug those you love...we all need hugs!

Blizzard...Grand Canyon and driving to Phoenix



We drove to Phoenix to help Ang and Tommy move into their new apt. Thursday night between Panguitch and Kanab we encountered a TERRIBLE snow storm...keep in mind it was May 22nd!!! Visibility was terrible---ZERO!!!--we had to drive 10-20 mph for miles! Then the next day as we drove around the rim of the Grand Canyon (one of Tim's dreams...we'd never been there.) we got dumped on again...MORE bad weather; this time it was rain, sleet, hail and snow...and it stuck to the road which made driving treacherous (Tim had taken his snow tires off) ...UGH!!! We could only see the canyon at one of the many look out points and it was SO cold...remember it was May 23rd!!! We arrived safe, but not mentally sound!!! We make the 11 hr. drive home tomorrow...NOT looking forward to that! The forecast is for nice weather--but keep in mind it was only supposed to be rain when we drove down here! It's wonderful to be here and spend time with Ang, Tommy and Jack.

The bottom: left to right back row...me and Lis, Abi and Mary and Annie. Lis and her husband, Bobby, drove up with Tim and me. Mary didn't know we were coming and you should have seen her dance and scream when she saw us standing in her living room at 11 pm at night. It was so good to be there! this fall Abi will be at Weber State...another school that has purple and gold for its school colors. We're looking forward to having her over, along with Lis and Bobby, for some Sunday dinners.

The sad reality is...

That we're back from Mexico and have worked 3 days already...I'll post a couple of pictures after they are downloaded.

Today is a rainy, cold day in SLC, quite a difference from the sun and warmth of Mexico. Okay, I'll stop whining!

It was marvelous, we had a lot of fun and ate way too much of the resorts gourmet food!

OH MY! This is quite the resort!

Check out the place we are staying at in Mexico. It is an all inclusive resort and so far it has been an incredible place to stay. The food is fantastic; last night we had dinner at the French restaurant and tonight the Lobster House...where only shrimp and lobster are served. Here is the link to the Excellence Riviera Cancun:

Today we visited Tulum...one of the sites of ancient ruins. We had been there before but it was amazing again. The song, "Book of Mormon Stories" kept running through my head! We also shopped a little in Playa del Carmen.

If you get chance to come here take it from us...we highly recommend this resort.

They made me cry!

Last night I was sitting in the upstairs TV room waiting for dinner to arrive, (Tim had ordered pizza because I went visiting teaching right from work) when Amy walked in carrying a baby...this baby was wrapped in a blanket and I couldn't see all of it...then I took a double take and THE BABY WAS JACK!!! Everyone says they wish they had a camera close because the look on my face was worth saving! Of course, being the softy I am, I got all teary, hugged and kissed him, then went to find Angela and hug her...she was just coming in the door. MY WHOLE FAMILY kept the secret that Ang and Jack were flying in for a few days... everyone knew but me! What a wonderful surprise!!! I have a ritual with Jack every morning that they are with us. I greet him with "Good Morning Gill" (remember What About Bob? when Bill Murray's character said good morning to his fish?) This morning Jack laughed so hard at me that he seemed delirious every time I said it to him...I didn't think I was so funny--I also think it's my voice inflections. Thanks fam, it is great having them here!

Inside the Utah State Capitol Building




We walked outside then went inside so Tim could see the newly renovated building. I had a ticket to the rededication; my friends had already given me a tour. We ran into a friend who works for the Governor's office and she let me show Tim around the new Lt. Govs office. After working in the Capitol for Govs. Leavitt and Walker, I grew to love the Capitol very much. It has magnificent architecture, history and is very beautiful. It's so bright now that almost 100 years of dirt has been cleaned off everything...the paintings are striking and the marble is so bright and clean. What a gorgeous building. The middle picture is a safe that is inside the inner offices---just outside the Lt. Govs door. As you can see, it was just painted. In case you're wondering...yes, I miss not working in this beautiful building.

Oh What A Beautiful Day!


Today is perfect in Salt Lake City; it is a gorgeous spring day. The Salt Lake Stake of the Church of Jesus Christ of Latter-day Saints is the longest continuous stake in the Church. In fact, Temple Square, the Conference Center etc. are all within our stake boundaries and we have stake conference in the Assembly Hall on Temple Square. Anyway, the weather is incredible so Tim and I, after our stake conference today, walked hand in hand around Temple Square and the plaza--I know that's probably cheesey to some of you, but it was so beautiful---it was an experience you'd want to share with someone you love. We can't let this beautiful day go to waste so we've changed our clothes, are eating some lunch and then going to walk around the new State Capitol Complex, which is just down the hill from our home, before company comes for dinner. Hope you're having a wonderful day where you are. My only regret...no pictures to post of the Temple grounds; the spring flowers are so beautiful on Temple Square and the Main Street Plaza I would have loved to share them with you. Maybe there will be something pretty at the Capitol--we are taking a camera. Update....photo of the Japanese Cherry Blossoms was taken on the Capitol Grounds.

Babe Ruth Bars

Years ago when we lived in Lexington, Kentucky, my friend, Carol, gave me the following recipe. I made them last night to take to work and they were a hit. Thought I'd share the recipe.

Babe Ruth Bars
4 cups oats
1 cup brown sugar
1/4 c. light corn syrup
2/3 c butter--melted
1/3 c. peanut butter
1 tsp vanilla

Mix all ingredients well; pat in a 8x8 in. pan prepared with cooking spray. Bake at 400 about 10 minutes--don't over bake or the bars are hard. Let cool a bit while melting 6 oz. semi sweet chocolate chips, 3 oz. peanut butter chips and 1/3 c. peanut butter; stir until mixed well. Do not get the chocolate too hot, melt gradually. Spread on top of warm bars. Cool completely, then cut. Enjoy!

Your eyes are the windows to your soul.

Okay, I just can't resist posting another Jack picture... look at his eyes! WOW! His Mom's are incredible too! Angela, Jack's Mom, is my third child, second daughter. Click on the picture to make it larger and you can see how beautiful their eyes are. Congratulations on the job offers! Jack's Dad, Tommy, graduates from law school in May and accepted a job in Phoenix, AZ. He will be working for the Maricopa County Attorney's Office.

Marriage...

So, my baby is getting married on Saturday, March 29th in the Salt Lake Temple. We are so excited and happy for Aaron and Tasha. Tasha is from Coalville, Utah; they met in Provo when they both worked for BRG. They compliment each other and love each other so much! We love Tasha tons and are happy to welcome her with open arms into our family. Since she's been Amy's roommate for almost a year, we've gotten to know her very well. She also traveled with us to Thailand and Hong Kong so she has seen us at our worst...and hopefully there is some "best" in there too. Her colors for the reception are brown and pink...thus the color pink in this post!!! Visit their blog.

36 years...

...and my mother said it wouldn't last! Tomorrow, February 11th, Tim and I celebrate our 36th wedding anniversary. We just returned from San Francisco celebrating and also visiting with Angela; her husband is in law school and will graduate this May. We had a wonderful time visiting the sites of SF like Alcatraz, Muir Woods National Monument...(huge redwood trees), Fisherman's Wharf, Union Square, China town(wasn't as interesting since we've been to Hong Kong and Beijing!!!). We ate at the Stinking Rose (everything is cooked with garlic); it was delicious! They have an incredibly beautiful Mall called Westfield; the food court has delicious food. Angela said some of the better SF restaurants have put their food as fast food there in that food court. We ate Thai food and had incredible cookies and cream puffs for dessert. Jack is adorable and jabbers all the time...and growls too!
